Switching it up 🤭 I’m very much a creature of habit and so for breakfast I always have very similar dishes, (stick to what you know and all that). The last couple of days however I’ve been testing out @ceresorganics #vegan chickpea omelette instead of my usual scrambled eggs. Fully Loaded #GF #Quick-Bake #OatmealBananaCookies Can’t wait to make these with my #swimottawa team on Saturday morning. 1 or 2 of these makes for a perfect #Breakfastcookie or #PreWorkout snack. For a more complete meal or for a #PostWorkout snack, pair with a greek yogurt or cottage cheese bowl or a protein shake. Dry Ingredients 3 cups large flake oats (I used certified GF @onlyoats) 1 handful unsweetened coconut 2 tbsp cinnamon Wet Ingredients 3 ripe mashed bananas 1 large handful fresh or frozen blueberries 3/4 cup chopped prunes (or dried fruits of choice) Handful of dark chocolate chips 1/4 cup nut butter or melted coconut oil for nut free option 1 Tsp Vanilla extract 2 Tbsp Chia seeds 4 Tbsp maple syrup or honey Combine and mix dry + wet ingredients. Best to mash bananas first and add the rest of the wet ingredients. Bake at 350F for 12-15 mins or until firm and toasted. Makes 18-24 cookies. Let cool before eating. These cookies are very adaptable 😃. Feel free to be flexible ingredients and proportions for this one. Choose your favourite combos of fresh, and #driedfruits, #coconut, #nuts, #seeds, #nutbutters, #chocolatechips. and spices like cinnamon, nutmeg, all spice. For a nut free variety use seed butter or coconut oil. Chocolate, coconut and dried fruits add extra carb and energy to these cookies but could be left out for a lighter snack.
